Breakfast Time

What are some of your favorite breakfast foods? Here's one of mine!

Egg Casserole:
3 tablespoons butter, melted
5 large eggs, beaten
1 cup cottage cheese
1/2 cup shredded cheddar cheese
1 4oz. can diced green chilies
1/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Preheat the oven to 350 degrees. Brush an 8 inch square baking dish with 1 tablespoon butter and set aside. In a medium bowl, whisk together eggs, cottage cheese, cheddar cheese, chilies, flour, baking powder, salt, and butter. Pour in baking dish and cook uncovered for 35 minutes. You could also double the recipe to feed more people!

mmmmmm...That is one of my favorite breakfast dishes as well! Another thing that my family likes is French Toast bake. It is healthy and easy. You put it all together the night before and then just put it in the oven in the morning. It is perfect for a busy morning.

I love Puff Pancake. You need a cast iron skillet for it. Here's the recipe:

1 c milk
1 c flour
1/2 tsp salt
1/2 tsp baking powder
6 eggs
3 T honey
3 oz cream cheese
3 T butter

Preheat oven to 400. Mix together all ingredients (except butter). Melt butter in cast iron skillet. Pour mix in skillet on top of butter. Bake 20-25 minutes. Sprinkle with powdered sugar (not flour...my mom did that once and it was gross!!) and serve with syrup. Yummy, but definitely not very healthy!!!

Thanks for this recipe. I never make breakfast (just cereal, granola bars, and bananas around here), but was asked to make a breakfast dish for a shower brunch. I'll use this one. Sounds delicious! :-)
