I use a lot of ground beef when cooking because it's super easy! For my Monday Meal recipe, I thought I'd go Italian. One of my favorites is to use 1 package of cheese frozen ravioli, 1 pound ground beef, 1 jar pasta sauce (whatever you like), and 1-2 cups shredded mozarella cheese. It's kind of like a lasagna. You brown the ground beef, and then begin layering in an 11 x 7 x 2 inch pan. Layer 1 cup pasta sauce, half of the frozen ravioli, half of the ground beef, and half of the cheese. Repeat the layering with 1 cup sauce, remaining pasta, and ground beef. Top with the rest of the pasta sauce. Bake uncovered in 425 degree oven for 30-35 minutes. Top wtih cheese, and cook until it's melted. What are some of your favorite Italian dishes?

My favorite Italian recipe is Lasagna Rolls. They are a little more time consuming, but I love them. Cook lasagna noodles. Brown 1 pound of hamburger. Mix together 2 cups ricotta cheese, 1 cup mozzarella cheese, 1/4 grated parmesan, 1 egg, 1 tsp garlic powder, 1/2 tsp salt and 1/2 tsp pepper. Lay a large piece of plastic wrap on counter. Lay noodles on plastic wrap and top with layer of cheese mixture. Start at one end and roll one noodle at a time. Fill 9x13 dish with about. 1/2 cup tomato sauce. Lay rolls seam-side down, cover with remaining sauce and sprinkle with cheese. You can do one of two things with hamburger... put some in roll or what I do is add to the top with the sauce. And then sprinkle 1/4 cup mozzarella cheese. Bake 20 min at 350. I actually like it without hamburger, but then my husband wouldn't eat it... Hope that all makes sense...
Hi Amber! I make a yummy chicken spaghetti. You use shredded chicken, 1 box of spaghetti (I like wheat), combine those cooked ingrediants with 1 can tomato soup and 1 can cream of mushroom, sauteed finely diced onions and celery, 1 jar pimentos, and top with shredded cheese. I also add 1/2 can rotel for some spice. Cook it on 350 until the cheese is melted. Its a good casserole that you can make in advance and then freeze till you are ready to use. Enjoy!

We kind of do the Lasagna rolls that Emily described .. but a little different. We call ours 'Pizza Lasagne Rolls' and use Pepperoni slices instead of the ground beef. Also, the stuff inside is only pepperoni, ricotta and mozerella cheeses.. no eggs or spices or anything. Super simple & yummy!
