Hominy

Hominy Casserole:

2 cans hominy (1 yellow, 1 with green & red peppers)
small onion (or onion seasoning)
1 can cream of mushroom soup
1 stick margarine
1 jar jalepeno cheese whiz or Mexican Velveta
garlic powder

Mix all ingredients together and top with crushed Fritos.  Bake in 350 degree oven for 25 to 30 minutes.  My husband never ate hominy before meeting me.  I think it's really good, and this casserole makes it even better!

I love hominy too, and have never had it like this before but I'll be trying it! One of our favorite casseroles has diced hashbrown potatoes, cream of chicken soup, cheddar cheese, butter, onion, and sour cream. It's pretty tasty :)
