Round Steak

I REALLY need some new recipes, so please share any of your favorite meals!  Here's one from a lady my mom works with, DaiAnn.

1 round steak cut into pieces
2 cans cream of mushroom soup
1 package onion soup mix

In 13x9 dish, cover steak with cream of mushroom soups.  Sprinkle onion soup mix over top.  Cover with foil and bake at 350 degrees for 1 hour.  This would be good with any vegetables, especially the classic green bean casserole.

TURKEY MEATLOAF (I do not care for meatloaf, but this was pretty good and very healthy...only 260 calories!)
16 oz Ground turkey
1/2 c old-fashioned or quick-cooking oats
1 small onion, chopped
1 egg, lightly beaten
1/2 ketchup, divided
Preheat oven to 375*. Mix all ingredients except for 1/4 c of the ketchup. Shape into loaf in 12x8 pan. Bake 45-50 minutes or until cooked through. Let stand 5 minutes and top with remaining ketchup.

CHEESY CHILI SOUP
28 oz diced tomatoes, undrained
15 oz kidney beans, rinsed
14.5 oz chicken broth
2 stalks celery, chopped
2 carrots, chopped
1 onion, chopped
2 tsp chili powder (I think I've left this our before and it's still yummy)
1 cup grated mexican style cheese, divided
Bring all ingredients except for cheese to boil in saucepan. Then simmer on low heat for 25 minutes and until veggies are tender. Stir in 1/3 c of cheese. Serve in large bowls and top with cheese. You can serve it with a dollop of sour cream and cilantro.

CROCK POT PORK TENDERLOIN
2 lbs pork tenderloin
1 envelope dry onion soup mix
1 cup water
3/4 red wine or cider vinegar
2 tablespoons minced garlic
2 tablespoons soy sauce
black pepper to taste
Place pork in crock pot, pour soup mix, water, wine, and soy over top over top. Spread garlic over top and sprinkle with pepper. Cook on low for 4 hours. Serve with cooking liquid as gravy. I serve this with rice.

BAKED TURKEY TENDERLOIN
2 lbs turkey tenderloin
1/4-1/2 c butter
2 tbsp cajun seasoning (Tony's will do)
small onion, sliced
2 carrots, sliced
2 potatoes, diced
foil
Heat oven to 350*. In 8x8 dish lay out large piece of foil. Lay veggies out then meat. Rub meat with seasoning and lay butter on top. Wrap completely with foil. Use another piece of foil and wrap again. Bake for 80 minutes or 1608. Rest 10 minutes before serving. This is nice because it's an all-in-one meal!!

This one is Brett's favorite:
Sweet and Sour Chicken
1 freshly, ready to eat pineapple sliced into wedges
2 bell peppers (red and green) seeded and cut into wedges
2t vegetable oil
1 lb chicken breasts or tenders, cut into pieces
1/2 C apricot preserves
1T cider vinegar

Place pineapple and peppers on broiler pan and broil 4-5 minutes per side or until browned. Set aside
Heat oil in non stick skillet over med-high heat. Season chicken with pepper. Cook, stirring 4-6 minutes until cooked through. Remove to platter. Add apricot preserves, 1/2 C water, vinegar and 1/2 t salt to skillet; boil 2 minutes. Stir in chicken, pineapple and peppers.

I like to serve it over white rice. It tastes great and is healthy!

And this is my favorite super easy meal for a cool night:

Tortellini Soup
2 Cans chicken broth
2 cans diced tomatoes with seasoning (italian, etc.)
1 package fresh tortellini
1 bag spinach

Bring the chicken broth and tomatoes (with their juice) to a boil in a large soup pot, Add the tortellini and cook according to package directions, Add spinach and cook until wilted, about 2 minutes.

I also add some beef polish sausage to this to make it more hearty, then top it off with some parmesan cheese!
